Even dough this is a homemade recipe; you can now get store-bought Biscoff ice cream in most grocery stores; some of the Biscoff ice cream flavors are Belgian chocolate chip, salted caramel, and blueberry cheesecake, and chocolate brownie.

I like homemade churned ice cream, but sometimes I want to do something quick and easy. If you don’t don’tany ice cream maker or want to bring it out, this no-churn Biscoff ice cream method is for you. The cream and condensed milk are the base of the ice cream, and you can add your touch by folding in cookies, fruit, or crumbles.
Ingredients for Making Lotus Biscoff Ice Cream

• Condensed Milk – use full fat for the creamiest ice cream
• Biscoff Cookie Spread– you can use either creamy or crunchy cookie butter. The one used in this recipe is creamy cookie spread, and it is the easiest to get.
• Vanilla extract – bring all the flavors together for a delicious ice cream
• Biscoff cookies – crush up some of the Biscoff cookies to stir into the ice cream.
How to Make Biscoff cookie Butter Ice Cream
Step One
Since the recipe does not include any cooking, it is crucial to have all your ingredients. If you are using a baking pan like me, then place a 9 x5 inch loaf pan into the freezer before you start mixing.
Combine the sweetened condensed milk with melted Biscoff cookie butter and vanilla extract in a medium bowl. Stir until well combined.
Step Two
In the bowl of a stand mixer or a large mixing bowl with an electric mixer, mix the cold heavy cream until it forms stiff peaks. Add 1 cup of whipped cream to the sweetened condensed milk mixture and stir gently until well mixed.
Pour the sweetened condensed milk into the remaining whipped cream and use a spatula to mix gently until a uniform look is achieved. If you want a marbled look, you can stop mixing when you achieve that. Pour the ice cream into a homemade ice cream container or the chilled loaf pan and spread it evenly.
Step Three
Cover the pan with plastic wrap or cling film and place the ice cream into the freezer to freeze for about 2 hours.
After two hours of chilling, bring the ice cream out and add pieces of the Biscoff cookies. Swirl to distribute the cookies evenly and sprinkle some on top as well. Return the ice cream to the freezer and freeze it for additional three hours or until firm to touch.
Step Four
Remove the ice cream from the freezer and allow it to stand for about 10 minutes to soften slightly before serving. After 10 minutes, the ice cream can be scooped into dessert bowls or ice cream cones and garnished with melted Biscoff butter cookies.

• When adding add-ins, mix the add-ins with the condensed milk before adding them to the whipped cream.

• Chop all your mix-ins since larger pieces become rock hard when frozen.
