Enjoy your fall mornings with homemade pumpkin waffles filled with fall flavors. These are fluffy, crunchier, and flavorful pumpkin waffles. They are easy to make, and you can try these pumpkin pancakes, too.

These pumpkin waffles are delicious, not overly sweet, and the best part is even the picky eaters like them.

These waffles freeze well, so I double the recipe and freeze them for a hectic weekday morning.
Ingredients You Need
These waffles are made with essential pantry ingredients, and they come together quickly. If you don’t know what essential ingredients you need for baking, check my post on the essential ingredients list and the basic tools for beginner bakers.
Flour: Use all-purpose flour for the base of these waffles.
Baking Powder: This leavening makes the waffle rise and fluffy.
Cinnamon + Pumpkin Pie Spice: pumpkin pie spice and ground cinnamon for more flavor and to bring the pumpkin taste out.
Pumpkin: use pure pumpkin puree and not pumpkin pie filling.
Sugar: granulated sugar; you can use brown sugar if you have it.
Egg: Binds everything together.
Oil: Adds moisture. I usually use olive oil, but you can use melted coconut oil or butter instead if you prefer.
Whole Milk: Whole milk is used for the recipe. You can also use 2% fat milk as well.
Vanilla Extract adds more flavor to the recipe.
How to make the Pumpkin waffles
- Preheat the waffle maker. This is the one I have and was used in making this recipe.
- Mix flour, sugar, baking powder, spices, and salt in a large bowl and set aside. Whisk together milk, vegetable oil, vanilla extract, pumpkin puree, and eggs in another bowl. Fold wet ingredients into dry ingredients. Allow the batter to sit for 5 minutes before using.
- Preheat a waffle iron according to the brand instructions, and lightly coat it with butter using a pastry brush or paper towel. Pour ½ cup batter onto the center of the lower grid of the waffle maker.
- Spread the batter evenly with a heat-proof spatula, cover, and cook the waffles until golden and crisp. Butter the iron in between batches as needed. Serve waffles immediately as they are ready, or keep them warm in a 200-degree oven until ready to serve.
What to serve with Pumpkin waffles
Pumpkin butter, apple butter, whipped cream, or a dusting of sifted confectioners’ sugar.
How to Freeze Waffles
Fully cooked waffles can be frozen in resealable, airtight plastic bags for up to 3 months. To reheat, put them in the toaster for a few minutes (use a light setting), and they come out nearly as well as freshly made and sometimes slightly crunchier.
