The best coconut biscuit will disappear quickly from the platter since they are irresistible. They require no chilling or rolling with a rolling pin. All you need is a mixing bowl and a wooden spoon or spatula.
Ingredients for Coconut Biscuits
This easy coconut biscuit requires only 4 ingredients, and you can find the full detailed ingredients and measurements in the recipe card below. Here is the list of ingredients needed:
- Self-rising flour: the flour contains rising agents and salt making it easy to use fewer ingredients in your recipes. If you don’t have one, you can easily make some using all-purpose flour, salt, and baking powder. Check out my homemade self-rising flour recipe here!
- Butter– use melted and cooled unsalted butter for the recipe.
- Coconut– shredded unsweetened coconut was used in this recipe. Make sure to buy unsweetened coconut since sweetened ones are more popular in the supermarket. Using sweetened coconut will make the cookies or biscuits so sweet as well.
- Sugar– white granulated sugar is used.
- Egg: large size fresh egg
How to Make Coconut Biscuits Recipe
These coconut biscuits use very simple and minimum ingredients and very few steps to make.
Preheat the oven: preheat the oven to 350F or 180C, line the baking sheet with baking paper, parchment paper, or silicone baking mat, and set aside.
Make the dough: melt the butter and allow it to cool slightly. Then, add all the ingredients (flour, coconut, sugar, egg, butter) into a bowl and mix to form a dough.
Shaping the dough: use a small ice cream scoop or a spoon to scoop the dough onto the baking tray. Use a fork to press down gently on the dough.
Baking the biscuit: bake the biscuits in the oven for about 10- 12 minutes or until golden brown. Allow the biscuit to cool in the baking tray for about 5 minutes before transferring them to a cooling wire to cool completely.
Decorating: decorate the biscuit with sprinkles before baking, or dip the baked cookies in melted chocolate for a perfect dessert.
Storage and Freezing Tips
You can chill the biscuit dough in the refrigerator for up to 4 days before using it. You can also freeze the biscuit dough for up to 3 months. When ready to use, allow it to thaw overnight in the refrigerator, then bring it to room temperature before continuing with the rest of the recipe.
