Accra banana Fritters, or cassava fritters, are made with 5 simple ingredients and no added sugars. They can be eaten at any time of the day and served with a hot sauce or pepper sauce.
This is a Cameroon recipe that has different variations depending on which region you are in. I found this recipe while looking for dishes that use overripe bananas in African recipes. Another special thing about this recipe is the name Accra—the same name as the capital city of Ghana, where I come from, so I had to try it. After making the recipe a few times, I loved the simple recipe, so I decided to share it with you all.

- Bananas– overripe bananas are the best in this recipe. It adds natural sweetness to the fritters
- Cassava (yuca root)—grated or milled—can be used. Traditionally, the cassava is grated by hand, which can be time-consuming, so I use a food processor to make the process easy and quick. For your convenience, you can buy frozen cassava dough from the grocery store.
- Gari: This is also made from cassava dough. Tapioca or cornmeal can be used in place of the gari.
- Spices: nutmeg and salt for flavor and taste
- Vegetable oil for frying

Step By Step Instructions
Using the grating blade, wash and grate cassava with a hand grater or food processor. Cut the cassava into smaller pieces for easy processing when using the food processor or the blender.
Place grated cassava in cheesecloth and squeeze as much as you can. With tightly wrapped cassava, place a heavy object on it and let it drip for at least an hour. Let it sit overnight to extract as much liquid from the cassava as possible.
Peel bananas and mash them with a potato masher in a medium bowl. If it is easy for you, you can also blend the bananas.
In a separate bowl, add the cassava dough and mix well to break up any lumps. Add the mashed banana, tapioca or gari, nutmeg and salt. Mix until completely incorporated. Taste the mixture and adjust the taste before shaping it.
Roll the mixture into a smooth ball using a small ice cream scoop or a tablespoon. (using the palm of your hand)
In a deep skillet on medium heat, add enough balls to hot oil and fry till golden brown. Take the cooked fritter out of the oil and drain on a paper towel
Serve and enjoy.
Storage and Freezing Instructions
Leftover Accra bananas can be stored tightly wrapped in the fridge for 3-4 days or in the freezer for up to two months. They can then be reheated in the oven or air fryer at 350-400℉ (180-205℃)for 5 minutes or until crispy.

- 2 cups mashed ripe bananas 6 medium bananas
- ⅔ cups gari
- 1 teaspoon salt
- ½ teaspoon ground nutmeg
- Enough oil for frying

- Heat oil (about 3 inches deep) to 375℉ (190℃) ina deep skillet or saucepan.G ently place the ball inthe hot oil and fry until golden brown. Take the cooked fritter out of the oil and drain on a paper towel
- Serve and enjoy.
Notes
When using frozen cassava dough, let it thaw completely before using for the recipe.
