Five ingredients African banana fritters recipe, these are delicious, gluten-free, and sugar-free.

Ingredients
  

  • 3 cups cassava dough
  • 2 cups mashed ripe bananas 6 medium bananas
  • cups gari
  • 1 teaspoon salt
  • ½ teaspoon ground nutmeg
  • Enough oil for frying

Instructions
 

  • Peel cassava (yuca root) with a knife.
  • Using the grating blade, wash and grate cassava with a hand grater or food processor. Cut the cassava into smaller pieces for easy processing when using the food processor or the blender.
  • Place grated cassava in cheesecloth and squeeze as much as you can. With tightly wrapped cassava, place a heavy object on it and let it drip for at least an hour to extract as much liquid from the cassava as possible. You can let it sit overnight.
  • Peel bananas and mash them with a potato masher in a medium bowl. If it is easy for you, you can also blend the bananas.
  • In a separate bowl, add the cassava dough and mix well to break up any lumps. Add the mashed banana, tapioca or gari, nutmeg and salt. Mix until completely incorporated. Taste the mixture and adjust the taste before shaping it.
  • Roll the mixture into a smooth ball using a small ice cream scoop or a tablespoon. (using the palm of your hand)
  • Heat oil (about 3 inches deep) to 375℉ (190℃) ina deep skillet or saucepan.G ently place the ball inthe hot oil and fry until golden brown. Take the cooked fritter out of the oil and drain on a paper towel
  • Serve and enjoy.

Notes

You can use cornmeal in place of gari or tapioca flour. The texture and taste will be slightly different, but it will be delicious.
When using frozen cassava dough, let it thaw completely before using for the recipe.
