Gari is a staple food and ingredient in Ghana. It is made from cassava, which is milled, liquid-extracted, and fried. Gari can be kept for a long time and is fulfilling when eaten. It has many uses, including gari Fortor, gari eba, which is eaten with soup or stew, and gari soakings made with gari, sugar, roasted peanuts, milk, and water.

- All purposes flour.
- Eggs
- Sugar butter
- Nutmeg
- Vanilla extract
- Salt
- Baking powder
Step-by-step instructions Using a Food Processor
- Making the Cookies Dough
The dough can be made using a wooden spoon, bowl, or food processor. Gari has two main textures- grainy and fine. Using the finer texture, you can skip the processing part. Pour the grainy gari into a food processor and process it into a finer texture. Then, add all the flour, baking powder, sugar, and salt. Pulse a few times for all the ingredients to mix well.
Now add the butter and pulse for a few minutes until incorporated. Add the eggs, milk, and vanilla extract to the flour mixture and mix to form a dough.
- Molding the Cookies
Transfer the gari dough into a bowl and use a small ice cream scoop to scoop a dough level; roll it between your palms to form a ball. Place balls 2 inches apart on the lined baking sheets, then use a fork to push down the center of each cookie, pressing firmly enough to make an indentation or design on top of the cookies.
- Baking the Cookies
Bake the cookies in a 350 f preheated oven for 15 minutes or until the edges start browning. Transfer the cookies onto a cooling rack and allow to cool completely before serving.

- In a medium mixing bowl, add the flour, gari, baking powder, salts, and sugar and mix well. Add the butter to the flour mixture and mix to incorporate using your fingers.

- Add eggs, milk, and vanilla extract and whisk them together in a small bowl.

- Pour the egg mixture into the flour mixture and mix using a wooden spoon or spatula to form a dough.

- use a small ice cream scoop to scoop a dough level; roll it between your palms to form a ball. Place balls 2 inches apart on the lined baking sheets, then use a fork to push down the center of each cookie, pressing firmly enough to make an indentation or design on top of the cookies.

How to Store the Gari Biscuits or Cookies
Allow the cookies or biscuits to cool completely and transfer them into an air-tight container on a countertop for up to a week.

How to Decorate
The Gari biscuits can be decorated in so many ways. You can add sprinkles to the dough before baking.
You can drizzle melted chocolate or peanut butter onto the baked cookies and allow the chocolate to cool before storing them.
