  • 1 cup Gari
  • 1 cup All purposes flour
  • ¼ teaspoon Salt
  • 1 teaspoon Baking soda
  • 2 large Eggs
  • cup white granulated Sugar
  • ¼ cup unsalted butter at room temperature
  • ¼ teaspoon Nutmeg
  • ½ teaspoon Vanilla extract
  • 1 tablespoon milk (add more if needed)

  • Preheat the oven at 350℉ and line two baking tray or sheet with baking paper or silicon mat.
  • Making the Cookies Dough
  • The dough can be made using a wooden spoon, bowl, or food processor. Gari has two main textures- grainy and fine. Using the finer texture, you can skip the processing part. Pour the grainy gari into a food processor and process it into a finer texture. Then, add all the flour, baking powder, sugar, and salt. Pulse a few times for all the ingredients to mix well.
  • Now add the butter and pulse for a few minutes until incorporated. Add the eggs, milk, and vanilla extract to the flour mixture and mix to form a dough.
  • Molding the Cookies
  • Transfer the gari dough into a bowl and use a small ice cream scoop to scoop a dough level; roll it between your palms to form a ball. Place balls 2 inches apart on the lined baking sheets, then use a fork to push down the center of each cookie, pressing firmly enough to make an indentation or design on top of the cookies.
  • Baking the Cookies
  • Bake the cookies in a 350 f preheated oven for 15 minutes or until the edges start browning. Transfer the cookies onto a cooling rack and allow them to cool completely before serving.

  • add the flour, gari, baking powder, salt, and sugar in a medium mixing bowl and mix well. Add the butter to the flour mixture and mix to incorporate using your fingers.
  • Add eggs, milk, and vanilla extract and whisk them together in a small bowl.
  • Pour the egg mixture into the flour mixture and mix using a wooden spoon or spatula to form a dough.
