This turkey and vegetable puff pastry is a perfect appetizer to go with any casual or formal dinner. This leftover turkey and vegetable puff dish is a savory pastry made with vegetables, turkey, and cheese, wrapped in a puff pastry and sliced into circles and baked. They are delicious and require less effort in making them.
This puff pastry can be made with any meat or poultry of choice. They can also be made as a vegetarian dish. Even though, I used leftover turkey from thankgiving dinner and fresh vegetables to brighten the dish, ground turkey can also be used. The turkey puff uses store-bought puff pastry for the base, but homemade pie crust or short crust pastry and homemade puff pastry will work.

- Puff pastry
- Turkey
- Carrot
- Onion
- Bell pepper
- Cabbage-shredded
- Cheese
- Black pepper
- Salt
How To Handle Stored Bought Puff Pastry
Store-bought puff pastry is a convenient way to bake some delicious pastry without making it from scratch. The only work is to allow the puff pastry to thaw. The puff pastry can be thawed in the refrigerator overnight or at room temperature for about 3 hours. The dough should not be too soft that the butter in it start to melt. When this happens, just put the pastry back in the fridge for about 15 minutes for the butter to firm up. When the dough firm up, you can start working with the dough again.
How To Use The Puff Pastry For The Recipe
When the pastry is fully thawed, unfold the pastry slowly so that it does not crack or break. Slightly flour the surface to be used for rolling and the rolling pin. Roll the pastry according to the recipe recommendation. For this recipe, roll pastry slightly to get straight edges for easy folding.
Preparation Before Making The Turkey Puff
- The first thing that should be done when using a new recipe is to read through the entire recipe and all the notes to get acquainted with the ingredients list and all prep work that needs to be done.
- If you are using store bought puff pastry, then it should be thawed ahead of time.
- Preheat oven to 350°F and prepare baking tray by lining it with parchment paper or silicon mat.
- Bring the turkey to room temperature and cut into pieces.
- Wash and cut all the vegetables to be used for the filling.
How To Make The Leftover Turkey and Vegetable Filling
- Wash and shred cabbage, chop onions and bell pepper. Finely grate the carrot. Set aside
- Melt butter in a medium pan over a medium heat, add the chopped onion and carrot, mix, and cook for about a minute. Or until the vegetables are soft.
- Add the chopped turkey to the vegetables and mix it together. And allow to cook for another minutes
- Add the shredded cabbage and green bell pepper to the mixture, mix and allow to cook for 1 more minute. Season with salt and pepper.
- Taste and adjust the seasoning.
- Remove the pan from the heat and set aside to cool.
How To Make The Turkey and Vegetable Puff Pastry
Unfold one of the thawed puff pastry and roll it out slightly.
Divide the filling into 2 equal part. Place one part of the turkey filling on the long edge of the pastry. Sprinkle a quarter of the grated cheese on the filling and roll it up. Brush the other edge of the pastry with just a little water to seal.

Cut each roll into ½ ” thick slices and placed them on the prepared baking tray. Brush the sides with egg wash and top pastry with a little more cheese. Repeat the steps for the other half of the puff pastry.

Bake the puff pastry for 12- 15 minutes or until golden and puffed. Bring them out of the oven and allow them to cool and serve.
Helpful Tips For Making The Turkey Leftover Dish
These leftover turkey puff dish can be made ahead of time and be kept in the fridge until they are ready to be baked. Wrap the turkey puff pastry dough roll in food wrap and refrigerate. When ready to bake, just slice the dough into 2 ” slices, egg wash the side, add more cheese on top and bake at preheated oven at 350 F or 180 C.
Storage Tips
This recipe can be doubled, and the baked turkey puff can be stored in the fridge for a few days or stored in the freezer for up to 3 months. for short time storage, store then in an air tight container. For long term storage, wrap the baked puff pastry with foil and put them in a freezer bag and store in the freezer. always remember to label storage bags with name of food and date
