This strawberry yogurt parfait pie with granola crust is amazing, light, delicious, nutritious, and above all gluten-free.
This pie recipe is easy to make and uses only a few ingredients especially if you decide to use store-bought granola or crust. If you are a fan of yogurt parfait then you will love this recipe too. The strawberry yogurt parfait pie uses the same concept as yogurt parfait and ingredients. The crust for the pie is made with granola, making it gluten-free and filled with cream cheese and yogurt filling and topped with fresh strawberries and honey.
What is Yogurt Parfait?
Yogurt parfait is a simple dish made from granola, yogurt, fruits, and honey. Parfaits are usually made by first layering a cup with creamy and thick yogurt, then granola on top of the yogurt which gives it a crunch, and finally, you add fruit and a drizzle of honey for some sweetness. This is usually eaten as breakfast or as a snack but I think it can be eaten at any time of the day. Even though most parfait uses flavored yogurt and berries, the choice is yours to decide. Some people prefer Greek yogurt while others prefer flavored yogurt. If you want to make it ahead of time, then the best is to make the strawberry yogurt parfait pie which will keep in the fridge for a couple of days.
How to Make the Granola for the Crust
Granola is made with rolled oat, nut, other grains, or seed and baked until golden brown. During the baking process, the granola is stirred to give it even baking for all the ingredients. I like everything made with oat because they are whole grain making them nutrient-dense. Rolled oat are easy to cook, they keep well and they are versatile ingredients when baking with them. I love granola and I do not know why it took me a long time before making homemade granola. Anyway, I am not buying store-bought again and I hope you will give this granola recipe a try and you will understand what am talking about. Granola Recipe
For this homemade granola recipe, I used old fashion rolled oat, shredded coconut, sliced almond, olive oil, honey, brown sugar, ground cinnamon, and salt. All the ingredients were mixed well and spread onto a baking sheet and baked at 300 F for 30 minutes or until golden brown. The granola can easily burn when in the oven so check on them after 20 minutes. The granola is stirred once halfway through the baking time. When done bring it out of the oven and allow it to cool completely before using for the crust or storing it.
How to Make the Granola Crust
The crust uses four ingredients which are granola, date paste, cinnamon, and melted butter. Using a food processor, pulse half of the granola with the date paste and cinnamon to form fine crumbs, then add the melted butter and process until mixed. Add the remaining granola and process until combined but not overly processed. Pour the mixture into the pie dish and press down evenly into the bottom and up the sides of the dish. You can use a spatula or the bottom of a measuring cup to press the mixture into the dish. Refrigerate for about 15 minutes to firm up before baking it in a 350 F preheated oven for 10 minutes. Bring it out of the oven and allow it to cool completely before adding the filling.
How to Make the Yogurt Filling
While your crust is baking, place the Greek yogurt or any yogurt you are using in a sieve lined with cheesecloth and set it over a bowl and allow the liquid to drain for about 10 minutes before using. To make the filling, I used a Hamilton Beach 6-Speed Electric Hand Mixer, Beaters and Whisk, with Snap-On Storage Case, White” target=”_blank” rel=”noreferrer noopener sponsored nofollow”>hand mixer. In the food processer, add the cream cheese and process it until smooth and creamy. Then add the yogurt to the cream cheese and process until mixed and add the sugar and vanilla extract. Process the mixture until everything is well mixed.
Making the Parfait Pie
To assemble the pie, make sure the crust is completely cool before using it. Pour the cream cheese filling into the crust and level it smoothly and put it in the fridge to set overnight or for about 6 hours. Bring the pie out of the fridge, then add sliced strawberries on top of the filling. Brush the strawberries with some of the honey and drizzle the remaining honey on the pie. The strawberry and honey should be added to the pie when ready to serve. The crust with the filling can be covered with cling film and stored in the fridge for a couple of days.
Variation to the Recipe
This parfait pie can be modified to your taste buds and health needs as you want. The first modification you can do is with the pie crust, even though this recipe uses granola crust, you can use flaky pie crust to give it a new taste. That will not make it gluten-free unless you use gluten-free flour. You can also use store-bought pie crust or any crust you prefer. The crust can be made with any granola of choice too and it can be store-bought or homemade. The fruit can be any fruit of choice too and pure maple syrup can be used in place of the honey.
Helpful Tips
- Brown sugar can be used in place of the date paste. You can make your own date paste by pouring 1/4 cup of water over one cup of date. Allow the date to soak overnight, then blend or process it in a food processor until smooth.
- When using the whole date, remove the seed from the date and cut them into pieces before using.
- Graham crackers can also be used in place of the granola.
- Do not over-mix the granola crust mixture but the mixture should be crumbly.
- If your honey is thick then warm it for a few seconds for easy pouring.

Strawberry Yogurt Parfait Pie
Equipment
- Food Processor
Ingredients
For the Granola
- 3 cups old fashion rolled oat
- 1 cup shredded coconut
- 1 cup sliced almonds
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
- 2 tablespoon brown sugar
- ¼ cup olive oil
- ⅓ cup honey
- 1 teaspoon vanilla extract
For the Granola Crust
- 2 cups granola
- 2 tablespoon date paste or 2 whole date
- ½ teaspoon ground cinnamon
- 3 tablespoon melted butter
For the Filling
- 1 cup plain greek yogurt
- 8 ounces cream cheese
- 3 tablespoon sugar
- 1 teaspoon vanilla extract
For the Toppings
- 2 cups sliced fresh strawberries
- 3 tablespoon honey
- ¼ cup whipping cream optional
Instructions
for the Granola
- Preheat the oven to 300 °F. Line a baking sheet with a parchment paper or a silicone mat and set aside.
- In a large bowl, whisk together rolled oats, sliced almonds, shredded coconut, salt, brown sugar, and ground cinnamon to combine. Then add the olive oil, honey, and vanilla extract and mix to coat all the ingredients. Spread the mixture onto the prepared baking sheet and bake in the preheated oven for 18 minutes.
- After 18 minutes bring the mixture out of the oven and stir, then put it back into the oven to bake for additional 10 minutes or until golden brown. Remove granola from the oven and allow to cool before transferring them into airtight containers.
For the Granola Crust
- After baking the granola, increase the oven temperature to 350 ° F.
- In a food processer, add the granola, date paste, ground cinnamon, melted butter, and pulse until fine crumbs form. Press the mixture evenly into the bottom and sides of an 8 or 9 inches pie plate. Refrigerate the crust for about 12 minutes or until firm. Bring the crust out of the fridge and bake in the preheated oven for 8 minutes.
- When done baking, bring the pie crust out of the oven and transfer to a cooling rack to cool completely before adding the filling.
For the Filling
- For this filling, the yogurt was strained to reduce the liquid to make a thicker filling for the pie. To strain the yogurt, place a sieve or colander lined with cheesecloth and place it on a medium bowl. Add the yogurt and let the liquid from the yogurt drain for about 15 minutes and discard the liquid.
- In a food processer, add the strained yogurt, cream cheese, sugar, vanilla extract and process until well mixed and smooth. Pour the filling into the prepared granola crust and refrigerate until firm.
- When ready to serve, slice fresh strawberries, arrange on top of the filling, and drizzle with honey. Serve and enjoy.
