Ingredients
  

  • ½ cup 1 stick unsalted butter
  • ¼ cup brown sugar packed
  • ¼ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semisweet or dark chocolate chips

Instructions
 

  • Step 1: Preheat and Prep
  • Preheat your oven to 350°F (175°C). Use an 8-inch or 10-inch oven-safe skillet (cast iron works best!).
  • Step 2: Cream the Sugar and Butter
  • In a large bowl, using a handheld mixer or a stand mixer fitted with a paddle attachment, add the granulated sugar and brown sugar, butter and beat on medium-high speed until fluffy and light in color
  • Step 3: Add Egg and Vanilla
  • Crack the egg into a small bowl before adding it to the mixture, and pour in the vanilla extract. Mix thoroughly until smooth. Scrape down the sides and bottom of the bowl as needed
  • Step 4: Stir in Dry Ingredients
  • In a different bowl, whisk the flour, baking soda, and salt together. On low speed, slowly mix the dry ingredients into the wet ingredients until well combined. The cookie dough will be quite thick. Add the chocolate chips, then mix on low for about 5-10 seconds until everything is evenly disbursed.
  • Step 5: Bake
  • Generously grease the bottom and sides of the skillet, then add the cookie dough to it. Place the skillet in the preheated oven and bake for 18–22 minutes, depending on the size of your skillet and the desired level of gooeyness. The edges should be golden, and the center just set. If you want your skillet cookie a little more cooked through, bake for a few more minutes. Allow the cookie to cool slightly in the pan before setting it on a wire rack to cool completely.
  • Step 6 Serve Warm
  • Let it cool for 5–10 minutes. Serve directly from the skillet, topped with ice cream, whipped cream, or a drizzle of caramel. I like to bake them through, then slice them like pizza for dessert.
