Any moisture left on the strawberries will cause the chocolate to seize up when you dip them, so use a paper towel or a clean kitchen towel to pat them dry.
Step 2: Melt the Chocolate
You can melt the chocolate using either the double boiler or microwave methods. Here’s how to do both:
Double Boiler Method: Place a heatproof bowl over a pot of simmering water (make sure the bowl doesn’t touch the water). Add your chopped chocolate to the bowl and stir gently until it’s smooth and melted. Remove from heat.
Microwave Method: Place the chocolate in a microwave-safe bowl. Microwave in 20-30-second intervals, stirring between intervals until the chocolate is completely melted.
Be sure to avoid overheating the chocolate, which can cause it to burn. If it seems too thick, add a small amount of vegetable oil or coconut oil to thin it out.
