Preheat oven to 400°F and line a baking sheet with parchment paper or silicon mat and set aside.
In large bowl, put chicken thighs in, wash under running water and pat dry with paper towel.
Mix all the dry ingredient together in a small bowl and set aside.
Drizzle the olive oil on the chicken thigh and rub the oil to coat the chicken. This helps the seasoning to stick to the chicken well.
Sprinkle the dry seasoning on the chicken and rub well to distribute the spices evenly on the chicken thighs. The seasoned chicken thigh can be left in the fridge overnight to develop more flavor or baked immediately, which also taste good.
Transfer the chicken thighs to a ½ sheet baking tray and put it into the oven to bake for 40- 45 minutes or the internal temperature reaches 165° F.
Let the baked chicken rest for about 5- 10 minutes before serving and garnish with fresh parsley.°
Notes
One 5 lbs. whole chicken can be used as a substitute for the chicken thighs. Increase the baking time to 1 - 11/2 hours or the internal temperature reaches 165F.
