Fudgesicles/ fudge pops
Fudgesicles are frozen chocolate desserts on a stick. These homemade fudgesicles have a texture like ice cream. After tasting these fudge pops you will not buy the commercial brand again.
medium size pan
- 2½ cups milk
- ½ cup brown sugar
- ¼ cup cocoa powder
- 1 tablespoon cornstarch
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
In a medium heavy bottom pan, Combine the sugar, cocoa powder, salt, cornstarch, and mix. Add 1 cup of milk to the cocoa powder mixture and whisk until well combined and smooth. Next, add the remaining milk and mix.
Place the pan on a medium heat and bring the cocoa powder mixture to simmer while stirring continually until the mixture thickens. It will take about 8 – 10 minutes. Make sure to scrape the bottom, sides and corners of the pan to prevent burning.
Take the pan from the heat and transfer the chocolate mixture to a glass measuring glass. Stir in the vanilla extract and set it aside.
Allow the fudge mixture to cool for a few minutes and then fill the popsicles mold about ¾ full. Cover the mold and add the sticks and freeze for about 4- 6 hours or overnight.
When ready to use, bring the fudgesicles out of the fridge for about 5 minutes and unmold and enjoy.
After unmolding fudge pops, re-freeze the popsicles on a tray lined with parchment paper for 20 minutes or until they are solidly frozen again. Remove the popsicles from the freezer, place them in a freezer zip bag, and seal.
Label the bag with the date and the flavor of the pops. Homemade fruit popsicles will keep for about one month in the freezer, and after that, they begin to lose their flavor.
