Homemade Peanut Brittle

This homemade peanut brittle is very simple to make, mainly uses two ingredients, no candy thermometer needed, delicious and is ready in 20 minutes.

  • 2 cups peanut (roasted)
  • 1 cup sugar
  • ½ tsp vanilla extract (optional)


  • Process the peanut in a blender or food processor into a sandy texture or the texture you prefer. If using vanilla extract, add it to the peanut while processing. Pour the processed peanuts into a small bowl and set aside.
  • In a medium nonstick pan, pour sugar into it and put it on a medium heat. Melt the sugar completely while stirring continuously to prevent the sugar from burning.
  •  Add the processed peanut to the melted sugar or caramel. This should be done immediately after all the sugar have melted. Mix thoroughly until the caramel has mixed and coated well with the peanut and pulled away from the sides of the pan.
  • Take the pan off the stove and turn the mixture onto a wooden board or silicon mat and use rolling pin to flatten the brittle. The brittle will be very hot at this point, so handle with care. You need to work fast so it does not become hard.
  • Rolled the peanut brittle into ½ inches thickness or to the thickness of choice. Cut the rolled peanut brittle into shapes with metal cookie cutters or knife while it is still hot and before it hardens up.
  •  Allow to cool and serve.


This recipe can be doubled and the rest can be stored in an airtight container for some weeks at room temperature.
