Simple Papaya Oatmeal Muffins

Simple papaya oatmeal muffins are easy, moist, and delicious to make.

  • cups all-purpose flour
  • 1 cup oat (old fashion)
  • tsp baking powder
  • ½ tsp nutmeg
  • ½ tsp salt
  • 1 cup papaya/pawpaw
  • cup brown sugar
  • 2 large eggs
  • ¼ cup vegetable oil
  • ½ cup milk
  • 1 tsp vanilla extract


  • Preheat oven to 350°F and prepare 12 muffin pan.
  • In a large bowl, combine flour, oat, baking powder, nutmeg and salt and mix together. Set aside.
  • In a separate bowl, whisk together eggs, papaya, brown sugar, vegetable oil, milk and vanilla extract until well mixed.
  • Add the papaya mixture to the flour mixture and mix well until just combined.
  • Spoon the muffin mixture into the prepared muffin pan. The pan should be ¾ full to give it a nice round top.
  • Bake the muffins in the preheat oven for 18-20 minutes or until a toothpick is inserted into the papaya muffins and comes out clean and dry.
  • Bring the muffins out of the oven and transfer them to a cooling rack. Serve and enjoy.


This papaya oatmeal muffins recipe can also be used for  papaya oatmeal quick bread and 9''x 5'' loaf pan will be needed. Also increase the cooking time to about 45- 50 minutes.
You can create variation by adding chocolate chips or nut to the mixture.
You can also sprinkle cinnamon sugar on the top before baking.
