In a large bowl, combine flour, oat, baking powder, nutmeg and salt and mix together. Set aside.
In a separate bowl, whisk together eggs, papaya, brown sugar, vegetable oil, milk and vanilla extract until well mixed.
Add the papaya mixture to the flour mixture and mix well until just combined.
Spoon the muffin mixture into the prepared muffin pan. The pan should be ¾ full to give it a nice round top.
Bake the muffins in the preheat oven for 18-20 minutes or until a toothpick is inserted into the papaya muffins and comes out clean and dry.
Bring the muffins out of the oven and transfer them to a cooling rack. Serve and enjoy.
Notes
This papaya oatmeal muffins recipe can also be used for papaya oatmeal quick bread and 9''x 5'' loaf pan will be needed.
